Entrees And Sides

Here are the recipes for some dishes my friends and I have made.

 
Steak For One
 
1 T-Bone steak (any will do)
2tbs Worcestershire Sauce
2tbs Steak Sauce
2tbs Mesquite BBQ sauce
2ts Mustard
1ts Garlic powder
1ts Onion powder
1ts Seasoned salt
1ts Beef grill seasoning
1/2ts Cayenne pepper
salt and pepper to taste
1 Small onion, sliced
 
Spray a medium skillet with cooking spray, on medium-high heat add steak and chopped onion.  In a bowl combine the other ingredients, turn the heat down to medium low and smear the mixture over the steak .  Remove the onions from the pan and set it on the second from the top oven rack.  Broil the steak on wire rack set in a oven pan at 400 degrees until done.  Remove steak and let it rest on the stovetop for 15 minutes before serving.  
 

 
Pork And Sauerkraut
 
Bravarian  sauerkraut
Pork rump
Black pepper
 
Place meat at the bottom of a crock pot, cover with sauerkraut, season with black pepper, slowcook until meat is done.

 
The Heat
 
4 hot dogs, or 3 red hots or 3 sausages (italian or polish) sliced down the middle
1 small onion, sliced
1/4 green pepper sliced
4 tablespoons hot sauce
4 tablespoons barbecue sauce
1 tablespoon honey
salt & pepper to taste
1 1/2 cup water
 
Place the sliced onion and green pepper in a medium skillet, turn heat to medium.  Place meat with the sliced open side down, stir vegetables.  Add in water, hot sauce, barbecue sauce, and salt & pepper, stir to mix in.  Cover, turn heat to medium high, let simmer for 7 minutes, stirring every 3 minutes.  Turn meat over, let simmer for 5 minutes, stirring once.  Remove meat and vegetables with a slotted spoon, and arrange on a plate or platter, leaving the liquid in the pan.  Turn heat to high, stirring constantly, let the liquid reduce, until it coats the spoon, turn off stove, pour reduced liquid over the dish.
 

 
Sauteed Apples
 
6 Apples
1/4 stick Butter
3tbs Sugar Free Caramel Ice Cream sauce
1 1/2tbs Cinnamon
4tbs Splenda
1ts Vanilla Extract
 
Wash, core, and slice the apples, add the butter to a large fry pan, over medium heat.  Add in all ingredients, apples first, then stir with a slotted spoon until all the slices have some of the ingrdients on them.  Saute, stirring occasionally until apples are soft.  Turn down the heat to medium low, and cover for 7 minutes.  Remove the apples with a slotted spoon into a serving or storing dish.  Turn the heat to high, and stirring constantly let the left over liquid reduce and thicken.  It should be a little darker than it was before, pour over the apples, serve. 
 

 
Nachos
 
1 Bag Tortilla Chips
1 pound Ground beef
1/2 onion
1 jalepeno pepper
1 packet Taco Seasoning
1 8oz. pack of shredded Mozzarella cheese
1 jar salsa mild-medium-hot depending on your taste
1 jar con queso mild-medium-hot depending on your taste
 
 
In a lightly oiled frying pan add ground beef, chopped onions, and chopped unseeded jalepeno, cook on medium high heat until meat is done, drain to remove grease.  Empty the contents of the jars into a sauce pot, add the Taco seasonings, and the drained meat mixture, stir.  Heat on medium and stir occasionally.  Add cheese little by little while stirring.  Mix well until all ingredients are incorporated and the cheese has melted.  Pour into a bowl, or into seperate smaller bowls and dip with tortilla chips.
 

 
Savory Dipping Sauce
 
 
3 parts mayonnaise
1 1/2 parts barbecue sauce
1/2 part hot sauce
1/4 part garlic powder
1/4 part onion powder
1/8 part dried oregano
salt & pepper to taste
 
Mix ingredients in a bowl until fully incorporated. 
 
Depending on how much you want to make 1 part equals 1 tablespoon for a single serving amount.  For a larger  amount, 1 part equals 1/4 cup.
